Jessica-I use sticky Japanese rice, I try to make it just a bit stickier than normal (we have a rice cooker). This last time I used rice vinegar from the store, it was so easy...just one tbsp to every cup of cooked rice. I think I cooled the rice before I added the rice vinegar.
Before I made the sushi vinegar from scratch but it was a lot more work.
It's really rather easy, mine are professional but they turned out good. I've only done California rolls.
I guess one tip would be to wet your fingers with the rice vinegar while working with the rice, also wet the seaweed beforehand and when sealing to get it to all stick together.

Oh, I LOVE sushi! I tried to make it a few times and it did not come out well. What kind of rice and vinegar do you use? Any tricks???
